A plant-based twist on the classic Quebec dish, featuring crispy fries and a savory mushroom gravy.
Ingredients
☐4 large potatoes, cut into fries
☐2 cups mushrooms, sliced (500 g)
☐1 onion, chopped
☐2 cups vegetable broth (500 mL)
☐2 tbsp cornstarch (30 g)
☐2 tbsp olive oil (30 mL)
☐Salt and pepper to taste
☐Vegan cheese curds (optional)
Directions
Preheat oven to 425°F (220°C). Toss the fries in olive oil and season with salt.
Spread on a baking sheet and bake for 30-35 minutes until golden and crispy.
In a saucepan, sauté onions and mushrooms until soft.
Add vegetable broth and bring to a simmer.
Mix cornstarch with a bit of water and stir into the gravy to thicken.
Serve fries topped with mushroom gravy and vegan cheese curds.
