Cook the pasta according to package instructions. Reserve a little of the cooking water.

In a pan, sauté the smoked tofu in olive oil until golden. Set aside.

In the same pan, sauté the onion, garlic, and mushrooms for a few minutes.

Add the spinach.

Add the plant-based cream, nutritional yeast, mustard, and lemon juice. Stir and let it warm gently. Adjust with a splash of pasta cooking water if the sauce is too thick.

Return the tofu to the pan, add the pasta, and toss well. Serve immediately.

Mon amie et moi, nous avons fait cette recette mais nous lui avons ajouté des petites tomates cerises. C'était complètement délicieux.
