These gluten-free buckwheat crepes are perfect for a hearty meal. Fill them with your choice of savory ingredients for a delicious dish.
Ingredients
☐1 cup buckwheat flour (120 g)
☐2 cups water (500 ml)
☐1 tsp salt (5 g)
☐2 tbsp olive oil (30 ml)
☐2 eggs
☐1 cup grated cheese (100 g)
☐1 cup sautéed mushrooms (150 g)
Directions
In a bowl, mix buckwheat flour, water, salt, and olive oil.
Add eggs and whisk until smooth.
Let the batter rest for 30 minutes.
Heat a non-stick skillet over medium heat.
Pour a ladle of batter into the skillet and cook until golden.
Fill with cheese and mushrooms, fold, and serve warm.
