These roasted vegetables are tossed in a sweet maple glaze, making for a delightful side dish for any meal.
Ingredients
☐2 cups mixed vegetables (carrots, zucchini, bell peppers)
☐3 tbsp maple syrup
☐2 tbsp olive oil
☐Salt and pepper to taste
☐1 tsp thyme
☐1 tbsp balsamic vinegar
Directions
Preheat oven to 400°F (200°C).
In a bowl, mix together olive oil, maple syrup, balsamic vinegar, salt, and pepper.
Add the mixed vegetables and toss to coat.
Spread the vegetables on a baking sheet in a single layer.
Roast for 20-25 minutes, stirring halfway through, until tender and caramelized.
Serve warm.
