These delicious quinoa patties are packed with vegetables and herbs, making them a healthy and gluten-free meal option.
Ingredients
☐1 cup cooked quinoa (185g)
☐1/2 cup grated zucchini (50g)
☐1/2 cup grated carrot (50g)
☐1/4 cup chopped onion (40g)
☐1/4 cup parsley, chopped
☐2 eggs
☐1/2 cup gluten-free breadcrumbs (60g)
☐Salt and pepper to taste
Directions
In a bowl, mix cooked quinoa, zucchini, carrot, onion, and parsley.
Add eggs and mix well until combined.
Stir in gluten-free breadcrumbs, seasoning with salt and pepper.
Form the mixture into patties.
Heat oil in a skillet over medium heat.
Cook patties for 4-5 minutes on each side until golden brown.
Serve warm with a dipping sauce.
