A hearty layered meat stew traditionally prepared in Quebec. Perfect for slow-cooking, it warms you up during the cold winter months.
Ingredients
☐2 lbs (900 g) beef chuck, cut into cubes
☐1 lb (450 g) pork shoulder, cut into cubes
☐1 lb (450 g) chicken thighs, boneless
☐4 potatoes, peeled and sliced
☐2 carrots, sliced
☐1 onion, chopped
☐1 tsp (5 g) dried thyme
☐2 cups (480 ml) beef broth
☐1 bay leaf
☐Salt and pepper to taste
☐2 tbsp (30 ml) olive oil
Directions
In a large skillet, heat olive oil over medium heat.
Brown the beef and pork cubes, then remove from the skillet.
In the same skillet, sauté the onions until soft.
In a slow cooker, layer the meat, potatoes, carrots, and onions.
Add thyme, bay leaf, and beef broth.
Cover and cook on low for 6-8 hours.
Season to taste before serving.
