A rich and hearty slow-cooked beef stew with local mushrooms and red wine, perfect for cold nights.
Ingredients
☐2 lbs beef chuck, cut into cubes
☐1 cup red wine
☐2 cups beef broth
☐1 onion, diced
☐2 carrots, sliced
☐8 oz mushrooms, sliced
☐2 cloves garlic, minced
☐2 tbsp flour
☐Salt and pepper to taste
☐2 tbsp olive oil
☐1 bay leaf
Directions
In a large skillet, heat olive oil over medium heat.
Brown the beef cubes on all sides and transfer to a slow cooker.
In the same skillet, sauté onions, carrots, and garlic until soft.
Add flour and stir, then pour in red wine and beef broth.
Bring to a simmer and pour over the beef in the slow cooker.
Add mushrooms, bay leaf, salt, and pepper.
Cook on low for 8 hours or until the beef is tender.
Serve with crusty bread or over mashed potatoes.
