This vegetarian twist on the classic Quebec dish features crispy fries topped with cheese curds and a rich vegetarian gravy.
Ingredients
☐4 large potatoes
☐2 cups (240 g) cheese curds
☐2 cups (480 ml) vegetable broth
☐1/4 cup (30 g) all-purpose flour
☐1/4 cup (60 ml) oil for frying
☐1 tbsp (15 g) butter
☐1 tbsp (15 ml) soy sauce
☐Salt and pepper to taste
Directions
Peel and cut the potatoes into fries.
Fry the potatoes in hot oil until golden brown and crispy.
In a saucepan, melt the butter and whisk in the flour to form a roux.
Slowly add the vegetable broth and soy sauce, stirring until the gravy thickens.
Place hot fries on a plate, top with cheese curds, and pour gravy over.
Serve immediately.
