A rich and savory gravy that is the perfect topping for Quebec's famous poutine dish, made with a blend of spices and beef stock.
Ingredients
☐2 cups (480 ml) beef stock
☐1/4 cup (30 g) all-purpose flour
☐1/4 cup (60 g) unsalted butter
☐1 tbsp (15 ml) soy sauce
☐1 tsp (5 g) onion powder
☐1 tsp (5 g) garlic powder
☐Salt and pepper to taste
☐1/2 tsp (2 g) dried thyme
☐1/2 tsp (2 g) paprika
☐1/2 tsp (2 g) black pepper
Directions
In a saucepan, melt the butter over medium heat.
Whisk in the flour, stirring constantly until golden brown.
Slowly add the beef stock, whisking to avoid lumps.
Add the soy sauce, onion powder, garlic powder, thyme, paprika, salt, and pepper.
Simmer for about 10 minutes until thickened.
Adjust seasoning to taste and serve hot over fries and cheese curds.
Store leftovers in the fridge and reheat before serving.
