This colorful quinoa salad pairs perfectly with a sweet maple vinaigrette, making it a great side dish or light meal. Healthy and satisfying!
Ingredients
☐1 cup quinoa (170 g)
☐2 cups water (500 ml)
☐1/2 cup diced bell pepper (75 g)
☐1/2 cup cherry tomatoes, halved
☐1/4 cup red onion, chopped
☐1/4 cup parsley, chopped
☐1/4 cup olive oil (60 ml)
☐1/4 cup maple syrup (60 ml)
☐Salt and pepper to taste
Directions
Rinse quinoa under cold water and drain.
In a pot, bring water to a boil and add quinoa.
Reduce heat, cover, and simmer for 15 minutes until water is absorbed.
In a bowl, combine diced vegetables and cooked quinoa.
In a separate bowl, whisk together olive oil, maple syrup, salt, and pepper, then pour over salad and toss well.
