Ingredients
☐1 cup Arborio rice (240 g)
☐4 cups chicken broth (1 L)
☐1 cup wild mushrooms, chopped (150 g)
☐1 small onion, diced
☐2 cloves garlic, minced
☐1/2 cup grated Parmesan cheese (50 g)
☐2 tablespoons butter (30 g)
☐Salt and pepper to taste
☐Fresh parsley, chopped (for garnish)
Directions
In a large saucepan, melt the butter over medium heat.
Add the onion and garlic, sauté until translucent.
Stir in the Arborio rice and cook for 2 minutes.
Gradually add the chicken broth, one ladle at a time, stirring frequently.
When the rice is al dente, mix in the wild mushrooms and Parmesan cheese.
Season with salt and pepper.
Garnish with fresh parsley before serving.
