A vegetarian twist on the classic Pâté Chinois, featuring layers of lentils, corn, and creamy mashed potatoes.
Ingredients
☐1 cup (200 g) lentils, cooked
☐1 can (15 oz or 425 g) sweet corn, drained
☐2 cups (500 g) mashed potatoes
☐1 onion, diced
☐2 cloves garlic, minced
☐1 tbsp olive oil
☐1 tsp thyme
☐Salt and pepper to taste
☐1/2 cup (120 ml) vegetable broth
Directions
Preheat the oven to 350°F (175°C).
Sauté onion and garlic in olive oil until translucent.
Mix cooked lentils, corn, sautéed onion, thyme, salt, and pepper.
Spread the lentil mixture in a baking dish.
Top with mashed potatoes, smoothing the surface.
Drizzle vegetable broth over the top.
Bake for 25 minutes until heated through.
