This hearty stew combines chickpeas and sweet potatoes, perfect for a comforting meal on chilly evenings.
Ingredients
☐1 can chickpeas, drained (15 oz)
☐2 medium sweet potatoes, diced
☐1 onion, chopped
☐2 garlic cloves, minced
☐1 can diced tomatoes (14 oz)
☐1 tsp cumin
☐2 cups vegetable broth
☐Salt and pepper to taste
Directions
In a large pot, sauté the onion and garlic until soft.
Add the diced sweet potatoes and cook for 5 minutes.
Stir in the chickpeas, diced tomatoes, cumin, salt, and pepper.
Pour in the vegetable broth and bring to a boil.
Reduce heat and simmer for 20 minutes, until sweet potatoes are tender.
Serve hot, garnished with fresh herbs if desired.
