Ingredients
☐1 can chickpeas, drained (15 oz / 400 g)
☐2 cups fresh spinach
☐1 onion, chopped
☐2 cloves garlic, minced
☐1 can diced tomatoes (14 oz / 400 g)
☐1 tsp cumin
☐Salt and pepper to taste
Directions
In a large pot, sauté the onion and garlic until translucent.
Add the diced tomatoes and cumin; cook for 5 minutes.
Stir in the chickpeas and spinach; cook until spinach wilts.
Season with salt and pepper, then serve hot.
