This hearty yellow pea soup is a comforting dish, perfect for cold days. Flavored with ham and spices, it's a true Quebec classic.
Ingredients
☐1 cup yellow split peas (200 g)
☐1 onion, chopped
☐2 carrots, diced
☐1 stalk celery, diced
☐1 bay leaf
☐1 ham hock or diced ham (7 oz)
☐4 cups chicken broth (1 liter)
☐Salt and pepper to taste
Directions
Rinse the yellow split peas in cold water.
In a large pot, sauté the onion, carrots, and celery until softened.
Add the yellow peas, bay leaf, ham hock, and chicken broth.
Bring to a boil, then reduce to a simmer for about 1 hour.
Remove the ham hock, shred the meat, and return it to the soup.
Season with salt and pepper before serving.
