This hearty beef stew is slow-cooked with root vegetables, perfect for chilly evenings. It's a comforting dish that brings the family together.
Ingredients
☐2 lbs (900 g) beef chuck, cut into cubes
☐4 cups (1 L) beef broth
☐3 carrots, sliced
☐2 potatoes, diced
☐1 onion, chopped
☐2 cloves garlic, minced
☐2 bay leaves
☐1 tsp (5 g) thyme
☐Salt and pepper to taste
☐2 tbsp (30 mL) oil for browning
☐1 tbsp (15 mL) cornstarch (optional)
Directions
In a large pot, heat oil over medium heat and brown the beef cubes.
Add chopped onion and minced garlic, sauté until softened.
Pour in beef broth and add carrots, potatoes, bay leaves, and thyme.
Season with salt and pepper, bring to a boil, then reduce to a simmer.
Cover and cook for about 2 hours, until beef is tender.
If desired, mix cornstarch with water and stir into the stew to thicken.
