A hearty Quebec vegetable stew that's comforting and full of flavor. Perfect for cold days and a great way to use seasonal vegetables.
Ingredients
☐4 cups (1 L) broth (vegetable or chicken)
☐2 carrots, chopped
☐2 potatoes, diced
☐1/2 cup (125 ml) green beans, chopped
☐1 onion, diced
☐1 teaspoon (5 ml) thyme
☐Salt and pepper to taste
Directions
In a large pot, bring the broth to a boil.
Add the carrots, potatoes, and green beans.
Stir in the onion and thyme.
Season with salt and pepper.
Simmer for 20-25 minutes until vegetables are tender.
