Ingredients
☐6 eggs
☐1 cup cream
☐1 cup shredded cheese (Cheddar or Swiss)
☐1/2 cup chopped spinach
☐1/4 cup chopped herbs (parsley, chives)
☐Salt and pepper to taste
☐1 package phyllo pastry sheets
☐Butter for greasing
Directions
Preheat the oven to 350°F (175°C).
In a bowl, whisk together eggs, cream, salt, and pepper.
Stir in cheese, spinach, and herbs.
Grease a mini muffin tin with butter.
Layer phyllo pastry in each muffin cup and fill with egg mixture.
Bake for 20-25 minutes or until set and golden.
