This dish features seasonal vegetables roasted to perfection with a sweet maple glaze. A delightful addition to any meal.
Ingredients
☐2 cups carrots, sliced (300g)
☐2 cups Brussels sprouts, halved (300g)
☐1 cup red onion, chopped (150g)
☐1/4 cup olive oil (60ml)
☐1/4 cup maple syrup (60ml)
☐Salt and pepper to taste
☐1 tsp thyme (5g)
☐1 tsp garlic powder (5g)
Directions
Preheat the oven to 425°F (220°C).
In a large bowl, combine the vegetables with olive oil, maple syrup, thyme, garlic powder, salt, and pepper.
Spread the mixture evenly on a baking sheet.
Roast for 25-30 minutes or until vegetables are tender and caramelized.
Stir halfway through cooking for even roasting.
Serve warm as a side dish.
