This roasted chicken is infused with herbs and garlic, resulting in juicy, flavorful meat. Perfect for Sunday family dinners or special occasions.
Ingredients
☐1 whole chicken (3-4 lbs, 1.4-1.8 kg)
☐2 tbsp (30 ml) olive oil
☐1 tbsp (15 ml) fresh rosemary, chopped
☐1 tbsp (15 ml) fresh thyme, chopped
☐4 cloves garlic, minced
☐1 tsp (5 g) salt
☐1/2 tsp (2 g) black pepper
☐1 lemon, halved
Directions
Preheat the oven to 425°F (220°C).
Rub the chicken with olive oil, herbs, garlic, salt, and pepper.
Place lemon halves inside the cavity.
Roast the chicken for 1 hour, or until the internal temperature reaches 165°F (74°C).
Let it rest for 10 minutes before carving.
Serve with your favorite side dishes.
