This traditional Quebec pea soup is rich, creamy, and packed with flavor. It's perfect for a cozy evening at home.
Ingredients
☐1 cup split peas (200 g)
☐4 cups water (1 L)
☐1 onion, chopped
☐2 carrots, diced
☐2 celery stalks, diced
☐1 bay leaf
☐1/2 cup cream (120 mL)
☐salt and pepper to taste
Directions
Rinse the split peas under cold water.
In a large pot, combine peas, water, onion, carrots, celery, and bay leaf.
Bring to a boil, then reduce heat and simmer for 20 minutes.
Remove the bay leaf and blend the soup until smooth.
Stir in the cream and season with salt and pepper.
Serve hot with crusty bread.
