Ingredients
☐4 medium potatoes, peeled and diced (1 lb / 450 g)
☐2 leeks, sliced
☐1 onion, chopped
☐4 cups vegetable broth (960 ml)
☐1 cup heavy cream (240 ml)
☐2 tbsp butter (30 g)
☐Salt and pepper to taste
☐Chives for garnish
Directions
In a large pot, melt butter and sauté leeks and onions until soft.
Add potatoes and vegetable broth, and bring to a boil.
Reduce heat and simmer for 20 minutes until potatoes are tender.
Blend until smooth, then stir in heavy cream.
Season with salt and pepper, and garnish with chives.
