Ingredients
☐4 large potatoes, diced
☐2 leeks, sliced
☐1 onion, chopped
☐4 cups (960 ml) chicken broth
☐1 cup (240 ml) heavy cream
☐2 tbsp olive oil
☐Salt and pepper to taste
☐Chives for garnish
Directions
In a large pot, heat olive oil over medium heat.
Sauté onion and leeks until softened.
Add diced potatoes and chicken broth.
Bring to a boil, then reduce heat and simmer for 20 minutes.
Blend the soup until smooth, then stir in heavy cream.
Season with salt and pepper.
Serve hot, garnished with chives.
