Ingredients
☐2 leeks, sliced
☐2 medium potatoes, diced
☐1 onion, chopped
☐4 cups chicken broth (960 ml)
☐1 cup heavy cream (240 ml)
☐2 tbsp butter
☐Salt and pepper, to taste
☐Chives, for garnish
Directions
In a pot, melt butter and sauté leeks and onion until soft.
Add diced potatoes and chicken broth; bring to a boil.
Reduce heat and simmer until potatoes are tender, about 15 minutes.
Blend the soup until smooth and stir in the heavy cream.
Season with salt and pepper.
Serve warm, garnished with chives.
