This classic Quebecois omelette is filled with fresh herbs, cheese, and diced ham, making for a hearty breakfast to start your day.
Ingredients
☐3 eggs
☐1/4 cup diced ham (40 g)
☐1/4 cup shredded cheese (30 g)
☐2 tbsp chopped fresh parsley (8 g)
☐1 tbsp butter (14 g)
☐Salt and pepper to taste
☐1/4 cup chopped bell pepper (30 g)
Directions
In a bowl, beat the eggs with salt and pepper.
Melt butter in a skillet over medium heat.
Add the diced ham and bell pepper, cooking for 2-3 minutes until softened.
Pour the beaten eggs into the skillet, swirling to distribute evenly.
As the edges firm up, sprinkle cheese and parsley on top.
Cook until the eggs are set, then fold the omelette in half.
Serve immediately with crusty bread.
