Ingredients
☐1 cup yellow peas (200 g)
☐1 onion, chopped
☐2 carrots, diced
☐2 celery stalks, diced
☐4 cups vegetable broth (960 ml)
☐1 bay leaf
☐Salt and pepper to taste
☐1 tbsp butter (15 g)
Directions
Rinse the yellow peas and soak them overnight.
In a large pot, melt butter and sauté onions, carrots, and celery until soft.
Add the soaked peas, broth, and bay leaf.
Bring to a boil, then reduce heat and simmer until peas are tender.
Season with salt and pepper before serving.
