A hearty stew made with tender beef and root vegetables, perfect for cold nights.
Ingredients
☐2 lbs beef chuck, cubed (900 g)
☐4 cups beef broth (1 L)
☐2 carrots, sliced
☐2 potatoes, diced
☐1 onion, chopped
☐2 cloves garlic, minced
☐1 tsp dried thyme (5 ml)
☐Salt and pepper to taste
Directions
In a large pot, brown the beef cubes over medium heat.
Add the onions and garlic, cooking until onions are translucent.
Stir in the carrots, potatoes, and thyme.
Pour in the beef broth and bring to a boil.
Reduce heat and let simmer for 1.5 hours until meat is tender.
Season with salt and pepper before serving.
