This moist banana bread is studded with walnuts, making it a perfect snack or breakfast option. Great for using up overripe bananas.
Ingredients
☐3 ripe bananas
☐1/3 cup melted butter (75g)
☐1 cup sugar (200g)
☐1 egg, beaten
☐1 tsp vanilla extract
☐1 tsp baking soda
☐Pinch of salt
☐1 1/2 cups all-purpose flour (190g)
☐1/2 cup chopped walnuts (60g)
Directions
Preheat the oven to 350°F (175°C).
In a bowl, mash the bananas with melted butter.
Stir in sugar, beaten egg, and vanilla extract.
Mix in baking soda and salt.
Fold in flour and walnuts until just combined.
Pour into a greased loaf pan.
Bake for 60-65 minutes until a toothpick comes out clean.
