This moist lemon zucchini cake is a delightful way to use up summer zucchini. It's perfect for dessert or a sweet snack.
Ingredients
☐1 1/2 cups all-purpose flour (180 g)
☐1 teaspoon baking powder (5 g)
☐1/2 teaspoon baking soda (2 g)
☐1/2 teaspoon salt (2 g)
☐1/2 cup vegetable oil (120 ml)
☐1 cup sugar (200 g)
☐2 eggs
☐1 teaspoon vanilla extract
☐1 cup grated zucchini
☐1/4 cup lemon juice (60 ml)
☐Zest of 1 lemon
Directions
Preheat your oven to 350°F (175°C).
In a bowl, mix flour, baking powder, baking soda, and salt.
In another bowl, whisk together oil, sugar, eggs, and vanilla.
Combine the wet ingredients with the dry ingredients, then fold in zucchini, lemon juice, and zest.
Pour into a greased pan and bake for 30-35 minutes.
