☐2 tbsp olive oil (30ml)
☐2 tsp salt (10g)
☐1 tsp black pepper (5g)
☐1 tbsp dried thyme (15g)
☐1 tbsp dried rosemary (15g)
☐4 cloves garlic, minced
☐1 lemon, quartered
☐Fresh herbs for garnish

Preheat oven to 425°F (220°C).
In a small bowl, mix olive oil, salt, pepper, thyme, rosemary, and garlic.
Rub the mixture all over the chicken, including under the skin.
Place lemon quarters inside the cavity of the chicken.
