Ingredients
☐2 large leeks, sliced
☐4 medium potatoes, cubed
☐4 cups chicken broth
☐1 cup heavy cream
☐2 tbsp butter
☐Salt and pepper to taste
☐Chives for garnish
Directions
In a large pot, melt the butter over medium heat.
Add sliced leeks and sauté until tender.
Stir in the cubed potatoes and pour in the chicken broth.
Bring to a boil, then reduce heat and simmer until potatoes are soft.
Blend the mixture until smooth, then return to pot.
Stir in heavy cream and season with salt and pepper.
Heat through and serve garnished with chives.
