Ingredients
☐3 medium potatoes, diced (about 1 lb/450 g)
☐2 leeks, sliced
☐1 onion, chopped
☐4 cups vegetable broth (960 ml)
☐1 cup heavy cream (240 ml)
☐2 tablespoons olive oil (30 ml)
☐1 teaspoon salt (5 g)
☐½ teaspoon black pepper (2 g)
☐Chopped chives for garnish
☐1 teaspoon thyme (5 g)
Directions
In a large pot, heat olive oil over medium heat.
Add onions and leeks, sauté until soft.
Stir in diced potatoes and cook for a few minutes.
Pour in vegetable broth and bring to a boil.
Reduce heat, cover, and simmer for 15-20 minutes until potatoes are tender.
Blend the soup until smooth, then stir in the cream, salt, pepper, and thyme.
Cook for an additional 5 minutes, then serve hot, garnished with chives.
