This hearty beef bourguignon is a twist on the classic French dish, infused with Quebec flavors and served with crusty bread.
Ingredients
☐2 lbs (900 g) beef chuck, cubed
☐4 cups (1 L) beef broth
☐1 cup (240 ml) red wine
☐1 cup (150 g) carrots, sliced
☐1 cup (150 g) mushrooms, sliced
☐2 tbsp (30 ml) tomato paste
☐2 cloves garlic, minced
☐Salt and pepper to taste
Directions
In a large pot, brown the beef cubes over medium-high heat.
Add garlic and cook for 1 minute.
Stir in wine and tomato paste, scraping the bottom of the pot.
Add beef broth, carrots, and mushrooms.
Bring to a simmer and cover, cooking for 1.5 to 2 hours.
Season with salt and pepper before serving.
