This hearty braised beef dish is slow-cooked with vegetables and herbs, creating a rich and comforting meal that's perfect for colder days.
Ingredients
☐2 lbs beef chuck, cut into chunks
☐1 onion, chopped
☐2 carrots, sliced
☐2 stalks celery, chopped
☐3 cloves garlic, minced
☐4 cups beef broth
☐1 tsp dried thyme
☐Salt and pepper to taste
☐2 tbsp olive oil
☐1 bay leaf
Directions
Heat olive oil in a large pot or Dutch oven.
Brown the beef chunks on all sides, then remove and set aside.
In the same pot, add onion, carrots, celery, and garlic, sautéing until soft.
Return the beef to the pot and add the broth, thyme, bay leaf, salt, and pepper.
Bring to a simmer, cover, and cook on low for 2-3 hours until the beef is tender.
Serve with crusty bread or over mashed potatoes.
