This hearty stew is perfect for warming up during cold winter days. Packed with tender beef and fresh vegetables, it’s comfort food at its best.
Ingredients
☐2 lbs (900 g) beef chuck, cut into chunks
☐4 carrots, chopped
☐3 potatoes, diced
☐1 onion, chopped
☐2 celery stalks, chopped
☐4 cups (1 L) beef broth
☐1 teaspoon dried thyme
☐Salt and pepper to taste
☐2 tablespoons olive oil
☐1 bay leaf
Directions
In a large pot, heat olive oil over medium heat.
Brown the beef chunks on all sides; remove and set aside.
In the same pot, add onions and sauté until translucent.
Add carrots, celery, and potatoes; stir for a few minutes.
Return beef to the pot and pour in beef broth.
Season with thyme, salt, pepper, and add the bay leaf.
Bring to a boil, then reduce heat and simmer for 1.5-2 hours until beef is tender.
