Ingredients
☐2 lbs beef chuck, cubed (900g)
☐1 cup pearl barley (200g)
☐4 cups beef broth (1L)
☐2 carrots, chopped (200g)
☐2 potatoes, diced (300g)
☐1 onion, chopped (150g)
☐3 cloves garlic, minced
☐1 tsp thyme (5g)
☐Salt and pepper to taste
Directions
In a large pot, brown the beef cubes over medium heat.
Add chopped onion and garlic; sauté until soft.
Stir in carrots, potatoes, and barley.
Pour in beef broth and add thyme, salt, and pepper.
Bring to a boil, then reduce heat and simmer for 1.5 hours.
Serve hot with crusty bread.
